Keto Taco Cups – For a Low Carb Taco Tuesday

Have a low carb taco tuesday with these Keto Taco Cups. Taco is a Mexican dish made with a fried tortilla. Its folded, and filled with various mixtures, such as seasoned meat, beans, lettuce, and tomatoes.

In this low carb version, the taco is made with cheddar cheese. Line a large baking sheet with parchment paper. Spoon about a tablespoon of cheese and spread them a few inches apart. Bake until edges are beginning to turn golden brown.  Form into the shape of a taco on a muffin tin.


Fill with taco cups with filling and then top with avocado, cilantro, and cabbage. This is an easy keto carb dinner recipe you’re going to love!

  • 8 oz raw mild cheddar cheese you can substitute with regular cheddar cheese
  • 1 tbsp coconut oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 lb ground lamb
  • 3 cups cabbage
  • 3 tbsp lime juice
  • 1/4 cup beer
  • 1 tsp cider vinegar
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • himalayan pink salt
  • Freshly ground black pepper
  • diced avocado for serving
  • chopped cilantro for serving

Instructions
  1. Preheat oven to 375° and line a large baking sheet with parchment paper. Spoon about a tablespoon of cheese and place them a few inches apart. Bake until the edges turn golden brown.
  2. Use a spatula to lift the cheese from the baking tray and place them on the back of a muffin tray. Let it cool for a few minutes.
  3. In a large skillet over medium heat, heat coconut oil. Add onion and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic and saute until the garlic is cooked thru. Add the chili powder, cumin, paprika, oregano, and pepper and saute for one more minute to release the aroma from the spices. Then add ground lamb, breaking up the meat into chunks with a spoon. Cook until lamb is no longer pink, about 5 minutes. Add the beer, vinegar, and salt and cook stirring until most of the liquid has evaporated, 2- 3 minutes.
  4. Remove the lamb from the pan leaving the excess fat in the pan. Saute the cabbage in the pan for 2 to 3 mins or till the cabbage has cooked thru. Season with salt.
  5. Transfer cheese cups to a serving platter. Fill with cooked ground lamb then top with sour cream, avocado, cilantro, and cabbage.
