You can make low carb cauliflower rice or low carb broccoli rice by processing them in a food processor or you can buy them pre cut from a grocery store. You can make low carb broccoli rice with this easy preparation technique.

Low carb Broccoli rice is a healthy fiber-rich side dish when you look for a grain and gluten-free alternative. How to make low carb Broccoli Rice ?


Broccoli “rice” or “pearls” can be made in a food processor. Cut the broccoli into 1-inch florets. Add the florets to food processor in small batches. Instructions
  1. Place the broccoli in a food processor and pulse it into tiny "rice" like pieces. Take care not to over process the broccoli. You can also use a store brought bag of broccoli pearls.
  2. In a frying pan, heat the coconut oil over medium heat, add the shredded coconut and saute for a minute until its turns slightly golden brown.
  3. Add the broccoli ‘rice’ and lightly cook for 4–5 minutes, or until softened.
  4. Now add the coconut cream and mix it well into the 'rice'.
  5. Season with salt and pepper and serve.
Recipe Notes

Use less coconut oil, shredded coconut and coconut cream for a lower calorie version of this recipe.
