Low Carb Pasta Primavera Noodles

What is Pasta Primavera ?
Pasta Primavera is a dish that traditionally consists of pasta and fresh vegetables. The word “primavera” means springtime in Italian.

Skip the pasta with this homemade low carb pasta primavera made with grape tomatoes, bell pepper, and cheese that uses spiralized zucchini as its noodles. This low carb dish is also really easy to make.


Spiralizing the Zucchini:
Zucchinis is in season June through September. Pick Zucchinis that still have a firm stem, and store unwashed in the crisper draw until ready to use. To make low carb pasts use a Spiralizer to transform the zucchini into oodles of zoodles. Following is the spiralizer I use to sprialize the zucchini.

Veggie overload:
To add variety in texture, color, and flavor, you can add in additional winter and spring vegetables. Toss in any spring variety. The key to making a really good pasta primavera is using the freshest vegetables available. This dish is loaded with vegetables that increases the nutrition profile of this recipe. This low carb pasta is also a great way to get kids to eat more vegetables.

Use a large Dutch oven or pasta pot to mix the vegetables and zucchini noodles. This dish is made of a lot of vegetables and you’ll need more room than you think to stir them together.

To spice up this dish you can add 1 tsp of chili powder when cooking the chicken.

Instructions
  1. Heat oil in a large skillet over medium heat. Add the chicken and season with salt, pepper, and Italian seasoning. Cook until golden brown or no longer pink, 6 to 8 minutes per side. Transfer to a plate to let cool, then thinly slice the chicken on a cutting board or slice it using the slicing blade in a food processor.
  2. In a large skillet over medium heat, melt butter. Add onion and saute until the onions turns soft and golden brown. Then add the garlic and mushrooms and cook for 2 more minutes. Now add the pepper and cook until mostly tender, 1 to 2 minutes. Season with salt, pepper, and Italian seasoning, then stir the shredded cheddar cheese and cook 1 minute. Stir in heavy cream and bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened, about 5 minutes.
  3. Add Zucchini Spirals, grape tomatoes and cook 2 to 3 minutes more, until noodles are tender and cheese has melted. Take care not to overcook the Zucchini. Stir in basil and remove from heat. Top with chicken, garnish with basil.
Recipe Notes

You can also shred the chicken in a food processor if you prefer smaller shreds of chicken. Try not to overcook the Zucchini as it does not taste as good when the zucchini becomes mushy.
